Festive Food

Having kidney disease does not stop you from enjoying flavourful, fresh tasty salads and meals. Dr Kelly Lambert, Advanced Accredited Practicing Dietitian and Academic Program Director of Nutrition and Dietetics of University of Wollongong shares a few recipes and tips for you to try at Christmas this year. They are suitable for all people with kidney disease.

Kidney Friendly Vietnamese Salad

Ingredients:

Instructions:

  1. Select serving bowl and add in cabbage, carrot, cucumber, tomato, chilli, and chopped herbs
  2. Add in dressing and lime juice
  3. Toss to combine and serve

Nutritional composition per serve as a meal: 600 kilojoules, 3g protein, 21g carbohydrate, 5g fibre, 700mg sodium (low), 537mg potassium (low) and 72mg phosphorus

Fill half your plate with vegetables and/or salad

Great salad options include: green bean salad, rocket salad with roast capsicum or pear and rice salad.

Avoid overeating and drinking

Using a smaller plate and glass will give you an illusion of a bigger and filling serving. And instead of grazing all day, enjoy a post meal walk or swim with your friends and family.

Swap high for low salt alternatives

Low salt foods include: roast meats without stuffing, fresh seafood, salads dressed with olive oil/vinegar/lemon juice/herbs, cranberry/apple sauce

Choose kidney friendly desserts and sweets

Traditional Christmas treats can be high in potassium and can be a problem for some people who need to follow a low potassium diet. Try gingerbread, fruit-based desserts, shortbread or panettone.

Dr Kelly Lambert is an Advanced Accredited Practising Dietitian with qualifications in knowledge translation, health economics and management, and two decades of experience as a renal dietitian and a doctorate investigating health literacy and cognitive impairment in end stage kidney disease. In 2020 she completed a 2 year post doctoral translational research fellowship to implement a new model of care for renal dietitians in the outpatient setting. Dr Lambert’s research interests and values are targeted at supporting people with kidney disease to live better lives and improving patient education by health professionals for patients. Kelly is passionate about developing patient education materials that accommodate the barriers faced by people with kidney disease including health literacy and cognitive impairment.
